Christmas Treats-Easy and Yummy

In the spirit of the holiday's and the craziness of mommyhood, I wanted to share two recipes that are very simple and yummy. The first one I found at AllReceipes.com last year and everyone always loves them (especially my husband).



White Chocolate Pumpkin Cookies


Ingredients
2 1/4 cups all-purpose flour
1 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
1 cup unsalted butter
1 1/2 cups packed brown sugar
1 cup solid pack pumpkin puree
2 eggs
1 tablespoon vanilla extract
2 cups white chocolate chips
1 cup chopped pecans


Directions
In a small bowl, whisk together the flour, pumpkin pie spice and baking soda.
In a medium bowl, with an electric mixer, cream butter and sugar. Beat in pumpkin pie puree. Beat in the eggs and vanilla. Beat in the flour mixture until just combined. Stir in the white chocolate and pecans.
Drop dough by rounded tablespoon 2 inches apart on an ungreased cookie sheet. Bake at 300 degrees F (150 degrees C) for 20-22 minutes until just set.





The next one is my all time personal favorite! My sister in law Alicia use to make this when I was younger and it is so addicting!





Saltine Cracker Toffee










Ingredients:
Saltines (crackers)
2 sticks butter
2 c. brown sugar
12 oz. pkg. chocolate chips


Lay crackers side by side in 10"x15" jelly roll pan (cookie sheet with edge).
Bring butter and sugar to boil and continue boiling until soft ball stage.
Pour toffee over crackers. Bake in 400 degree oven for 5 to 7 minutes. Watch carefully so doesn't burn.
Sprinkle chips over toffee/crackers and return to oven for 30 seconds to melt. Cool to set and harden. Crack and enjoy

  1. I swear everyone makes that second one in one way or another ... LOL And I love the pumpkin cookies. They are not very strong but very good. (Too easy to eat a LOT!)
